Mesmen is considered a Moroccan recipe, and it has become famous in all regions of the Maghreb, in addition to the western part of Algeria as well. It is a popular traditional recipe for a type of pastry that is eaten with tea, oil, or honey for breakfast or dinner, and it is one of the basics of the tables of the holy month of Ramadan. A cup and a half of white flour.
A cup and a half of wheat flour.
A small spoon of salt. One egg. A teaspoon of sugar.
Two hundred grams of melted butter.
Half a cup of vegetable oil. Three-quarters of a cup of
warm water.
Half a teaspoon
of baking powder.
Half a cup of fine semolina.
A teaspoon of instant yeast
How to prepare
Mix white flour
and wheat flour in a deep bowl, then add salt and baking powder and stir.
Add the egg and
mix it with the flour, then add the butter and begin the kneading process.
Dissolve the yeast with a little warm water, add sugar to it, add it to the
mixture, and continue kneading.
Add the amount of
warm water gradually so that we put a small amount of water and knead, then add
another amount and continue kneading.
We continue the
kneading process by hand until a cohesive, non-sticky dough is formed.
We cut the dough into small balls after wetting our hands
with a little vegetable oil so that the dough does not stick to the hand.
Place the dough balls on a tray, cover them well, then
set them aside to rest for about fifteen minutes.
We grease the
area to be kneaded with vegetable oil and begin to spread the dough using our
fingers until we obtain a thin circular disc.
Sprinkle a little
semolina on the dough disc, then fold the dough to obtain a square shape.
Place the dough in a baking tray and cover it to rest for
about fifteen minutes. We press the palm on the squares of fattening after
wetting the palm with vegetable oil. Place a frying pan on high heat and add a
spoonful of vegetable oil to it until the oil is hot, then reduce the heat a little
and put a piece of semolina in the frying pan. Fry the semen for about four
minutes on each side until it is cooked. Serve hot with tea or coffee.
