Groundnut stew, or mafe, is a typical dish in West and Central Africa. This classic stew is created with a delicious sauce made from peanut butter and tomatoes, and it may be cooked with meat, veggies, or fish. This dish is taken from the A Taste of African Heritage culinary program and is attributed to Iba Thiam, chef and proprietor of the Cazamance restaurant in Austin, Texas. Featured component is the sweet potato, a beloved African traditional meal.
Components
Two tsp pure virgin olive oil
One medium-sized chopped yellow onion
two minced cloves of garlic
One big sweet potato, cut into cubes of a medium size
Two big carrots, thinly sliced
Two green zucchini, thinly sliced into halves
One little can (15 oz) of chopped tomatoes without additional salt
Two cups vegetarian broth reduced in sodium
One spoonful of curry powder
Half a cup organic peanut butter
One teaspoon of dried thyme or three chopped fresh sprigs
to taste sea salt
