is a famous street dish that street sellers sell all throughout Algeria. It is made of a chickpea batter, covered with beaten egg and baked, and resembles pies, pancakes, and flans. It can be served hot with harissa and cumin on toast as a sandwich or divided into squares.
The components
Three cups of boiled chickpeas.
Six eggs.
Six pieces of cheese cubes.
Half a cup of olive oil.
Salt, to taste.
Brown pepper as desired.
A teaspoon of
cumin.
How to prepare
Place the eggs
and cheese cubes together in the electric blender and mix well. Add olive oil
to the mixture, and mix again until the mixture is combined. Add the water and
the boiled chickpeas in a large bowl and mix them well, then put them in the
blender until they blend and crush the chickpeas, then add salt, cumin, and
brown pepper.
Add the first mixture (cheese and egg mixture) to the
second mixture (water and chickpea mixture), mix well, then put the entire
mixture in a tray and put it in the oven for at least half an hour.
We serve the dish
warm, and it can be served with chili pepper.
